Crustless Vegan/GF Spiced Apple Crumble
I'm a sucker for apple pie. It's a staple in our home come October. And my crusts? Well...don't mean to toot my own horn here, but I'm gunna, and they're to die for. They're also loaded with butter, flour and sugar and probably not the best thing to enjoy on the regular if you want to still be able to fit in your pants and/or not feel like crap.
Well...I'm not one to lecture about needing to keep everything super healthy come the holidays ( I do think there is great merit in letting go and indulging!). However, if you're like me and want to eat delectable treats every week once the whether cools down and chow down on all things heavy and hearty then swapping in some healthier, modified recipes for some classic comfort foods is a great option so that things don't go too overboard AND you can still enjoy the season indulgently.
Sooooooo as an equally delicious and far healthier substitute I make this Crustless Vegan/Gluten Free Spiced Apple Crumple that can be enjoyed regularly as a dessert (or breakfast if you're feeling frisky!). It's crazy fast and easy to make (which is GREAT if you have kids and zero time or patience) and gives all those cozy Autumn feels which we crave come Fall minus the whole "not being able to fit in our pants thing" come Spring.
Crustless Vegan G/F Spiced Apple Crumble
8 apples peeled, cored and sliced. Mix of tart and sweet.
1 Tbsp lemon juice
1/3 cup sugar
1/3 cup brown sugar
1 Tbsp corn startch
4 tsp's cinnamon
2 pinch salt
1/4 cup gluten free flour (I use rice most often)
1/2 cup gluten free old fashioned oats
1/4 cup almond flour
1/3 cup non dairy butter melted
Preheat oven to 350 degrees and lightly grease a 9x9inch baking dish.
Add apples to large bowl and toss with lemon juice. Add white sugar, cornstarch, 1 pinch of salt and 2 tsp's cinnamon. Toss to coat.
Transfer to baking dish and set aside for later.
Clean the bowl and add brown sugar, both flours, oats, 1 pinch salt, and 2 tsp's cinnamon. Mix well.
Add melted butter and mix until it looks like wet, grainy sand.
Sprinkle mixture on top of apples and then bake until topping is golden brown (between 45 minutes-1hour).
Let sit for 10 minutes. Great when served with vanilla ice cream or vegan whipped cream.
Hope you enjoy this somewhat guilt free dessert! Although you should never feel guilty about enjoying dessert...even if you decide to go for full buttery butter and gluten galore! Whatever you choose, savor it unapologetically!
