Gluten Free Chocolate Peanut Butter Protein Waffles

I'll admit...I'm a big fan of carbs! Me and everyone else right?! I love all things sweet, all things bread and all things sugar. However, my body doesn't like these things as much as I do. I get bloated, cranky, and just end up wanting to eat more sugary carbs within a couple hours of eating the first round of sugary carbs. BUT...I have found ways to work around this health and wellness pitfall AND still eat the sweets I love.


These gluten free protein waffles are one of my favorite indulgences when I'm really in the mood for something sweet and super satisfying. They have a lot of protein and healthy fats in them that help keep me full for hours longer than eating regular waffles, plus the fat, fiber and protein content in them helps to curb the blood sugar spike and crash that usually accompanies eating carbs. I use Amazing Grass Chocolate Peanut Butter Protein Powder for a big punch of plant based protein, as well as Moodbeli Mushroom Adaptogen Blend with Reishi and Cordyceps to help improve stamina, energy levels and focus. Kids love them (eating them AND helping make them), and they only take about 10 minutes and pretty much zero prepping which is always nice! You could make them as pancakes if you don't have a waffle maker, but I HIGHLY suggest getting one! The waffles are done in under minute, they don't stick to the insides of the maker and they soak up all the syrup and toppings just right. If you're paleo you can just use almond flour, though they will be a bit more sticky and less fluffy FYI.


Gluten Free Chocolate Peanut Butter Protein Waffles:



Ingredients:

  • 1 egg

  • 1/2 c. almond milk (enough to make a thick, creamy batter...can add more if needed)

  • 1tsp baking powder

  • 1 tbsp coconut oil

  • 2 tsp cacao powder

  • 1 big scoop chocolate peanut butter protein powder ( I love Amazing Grass)

  • Optional -1 scoop Moodbeli Mushroom Adaptogen Blend (cacao, reishi and cordyceps)

  • 1/2 c. oat flour

  • 1/2 c/. almond flour

  • 1 tsp vanilla vanilla or almond extract

  • 1tsp cinnamon

  • 1 tbsp maple syrup

  • 1 ripe banana mashed

  • 1 tbsp flax meal

  • peanut butter and fresh fruit to top waffles with



Instructions:

  1. Turn on waffle iron

  2. In medium bowl mix all dry ingredients

  3. In small bowl, mix all wet ingredients (including mashed banana). Whisk together until smooth.

  4. Fold wet ingredients into dry ingredients. Mix well until smooth.

  5. Once waffle iron is hot, spray with non stick spray and then add about 1/4 cup of batter to the middle.

  6. Close, cook until it the light says it's ready (about a minute or 2 depending on the waffle iron. Remove waffle and set aside. Repeat process until batter is done.

  7. Top with fresh fruit, drizzled peanut butter and syrup if desired. Great when served with coconut yogurt on the side as well.



Eat up and enjoy! These are pretty tough to put down once you fill up your plate! From my heart to yours...
